A healthy diet is the single, best thing I can do to help reach my health and fitness goals this year. However, with all 3 of our kids playing sports, this demand on our time creates pressure for us to eat out multiple times a week. We all like to eat out, but not eating out helps me stay on track and teaches all of us delayed gratification.
We had breakfast at home before church this morning. Immediately following church, we headed to our middle son’s basketball game. The question of where/what we’re eating for lunch came up before we even made it to his game.
I went grocery shopping this week, so there was no excuse for us not to eat at home. I knew I could get a quick meal on the table in about the same time it would take for us to go through a drive through or sit down in a restaurant. They weren’t happy about it, but I let everyone know we would be eating at home today.
To give a little peak into my journey, just for fun I recorded a video of the quick, healthy semi-homemade meal I made for my family. If you try it or you have a semi-homemade meal, leave a comment.

You could replace the olive oil with cooking spray.
Use whatever veggies your family likes.
The teriyaki sauce adds sugar to the dish. The chicken is really flavor without it. I will probably leave it out next time or just use one packet instead of two.
